Rolled Rib 4lb rolled rib 1.8kg 1/2cup butter or fat 4oz/100g 1 apple, sliced 1 1/2tsp salt 1tsp marjoram or oregano 1/2tsp pepperPour a kettle of boiling water over the meat. Brown the butter or fat in a pan in the oven, add the meat, and bake in a 177C, gas mark 4, 350F oven for 2 hours. After 1 hour add the sliced apple and the spices. If the roast gets too brown, add a little water to the gravy. Allow about 1/2 hour to the pound. Baste often.
Serve warm with cabbage or Brussels sprouts or, when cold, with fried potatoes and a green salad
