Deep Fryer Crab /Lobster Fritters
vegetable oil 2 Tbs. unsalted butter 2 Tbs. olive oil 1/2 green bell pepper\cooked, seeded and finely chopped 1 clove garlic, minced 3 Tbs. fresh parsley, minced 1/2 cup all purpose flour 1/2 cup milk 6 ounces crabmeat, canned or frozen and thawed, shredded (lobster is also great) 1 tsp. sherry 1 tsp. paprika 1/4 tsp. cayenne pepper 1/2 cup all purpose flour 1 egg, beaten with 1 tsp. water 1/2 cup breadcrumbs
Heat butter and olive oil in a saucepan over medium heat. Sauté green pepper, garlic and parsley 5-7 minutes, until tender. Stir in flour and milk, stirring constantly until thickened. Remove from heat. Stir in next 4 ingredients and chill 2 hours.
Shape mixture into 1 inch balls. Roll in flour and dip in egg mixture. Roll in breadcrumbs and refrigerate until ready to serve. Heat oil in an electric deep fryer to 375°F. Deep fry 4-5 minutes, 3 or 4 at a time, turning once, until golden. Drain on absorbent paper.
