Rayner's Famous Goat's Cheese, Pomegranate and Couscous Salad 150g Coucous Some vegetable stock 2 tblsp olive oil Juice of half a lime 200g of vegetarian goat's cheese (or feta if you prefer), crumbled Seeds of 1 pomegranate 2 tblsp chopped fresh coriander 2 tblsp toasted pine nuts Should serve 2. Perfect for barbeques, I should have really posted this a couple of months ago... This is easy - chuck the couscous in a bowl with the hot vegetable stock. Leave for 10 minutes or so until all liquid has been absorbed. Pass the time mixing the dressing (olive oil and lime juice) and humming to yourself. Getting the seeds out of the pomegranate can take a while as well. Fluff up the couscous with a fork and then stir in the cheese, pomegranate seeds, coriander and pine nuts. I'm telling you this tastes absolutely lovely and everyone will think you are a culinary genius. Don't tell them it took 15 minutes to make.
