Carrot & coriander soup One big onion 8 carrots table spoon of ground coriander 1 organic chicken stock cube salt & pepper
Soften the onion in the bottom of the pan with a little oil. Chop the carrots and add then to the pan, add water, the stock cube, coriander, salt & pepper, bring to the boil and allow to simmer until the carrot are soft. Either mash the mixture or use a hand processor until it is the consistency you like. Add some milk or fresh cream at the end to taste.
